Holding the Line: Why we don't do delivery at Señarís
Many of you ask us the same question: "Why don't you serve your burgers through delivery apps?" You ask with the best intentions, wanting to help our business grow. We are truly grateful. But today, after more than 25 years at this counter on Avenida de Quiroga Palacios, we are going to break down this question, piece by piece.
This isn't a 'no' born of pride. It's a 'no' born of love. A 'no' that protects what we have built: the integrity of our work and the custody of our craft.
A Life Project, Not Just a Business
The first thing you should know is that what to you might be an old shop on a narrow street, for us is a life project. More than twenty-five years ago, Susana and I put every penny of our savings and all our hopes for a future of freedom into this place.
Before this, we both worked in "high-performance" hospitality for a large chain. One as a waiter, the other as a cook. The service was exquisite but distant; polite, but hollow. In the kitchen, speed trumped detail; it was a production line little different from a robot in a car factory, with the sole exception that we could say hello to people.
The Question That Changed Everything
It was there that the question haunting us for years finally surfaced: How do we escape this "rat race" and just be ourselves?
The answer came instantly, because it had always been there, though we had never dared to ask it. The truth is, asking that question when you have scarce resources is terrifying. Contemplating freedom when you have no safety net is a kind of vertigo that few dare to name.
Even so, we decided to try. We worked a few more years in that "assembly line" and began to lose our fear. Family support gave us the push we needed to lean over that abyss and look into it without vertigo.
And so this old local spot was born, with our eyes set on a future where our work dignifies us without losing our human essence. A simple life, without grand pretensions.
Custody and Responsibility
Within the freedom this place allows us is where our human essence blooms, giving rise to a genuine sense of closeness and love for what we do; and we want to ensure that this reaches your burger.
When you come here and order, we serve you with the best intention of satisfying you. But how can we stand behind it if we surrender custody of our craft? How can we guarantee that this love and implicit closeness reach you if the product leaves our hands to enter a zone we do not control?
For us, the answer is clear: the face-to-face encounter is everything.
Maintaining custody means that when we hand you your food over the counter at Avenida de Quiroga Palacios, a pact between you and us is sealed: a silent agreement where quality is not a broken promise, but a present witness. You see the product in its optimal state — hot, fresh, made with the care we invested — and in our eyes, you read our genuine appreciation. That is something no app can deliver.
If we allowed our love and craft to travel in a plastic bag or on the sweaty back of a stranger, we would be breaking that pact. We would be handing your trust over to an algorithm and a sense of haste that are not ours.
The Moment of Truth: "Hold the Line"
We won't deny it: there were dark times when we thought about it. I remember those pandemic years, those nights when we closed the shutters and, after cleaning what wasn't even dirty because we'd had almost no customers, we opened the cash register and saw it practically empty — just enough to pay the electricity bill at month's end.
When we saw a delivery bike pass by, the thought of entering that circle crossed our minds. We even looked at prices and websites; everything pushed us to break that unwritten pact that lives in the conscience of a project born from the opposite, to enter once again — though in a different form — that "assembly line" we had worked so hard to escape.
But no, sir. Here, we hold the line!
In that moment of doubt, we looked each other in the eye and remembered why we had escaped the "factory" in the first place. We remembered that our ideals were not about filling the register at any cost, but about never again becoming cogs in a machine that doesn't belong to us.
To enter that circle would have been to admit that our love and craft can travel in a plastic bag, that our responsibility ends at the door, and that your trust can be dispatched by an algorithm. And we said no. We preferred the uncertainty of an empty register to the certainty of a sold soul.
That was our 'Hold the Line.' We decided that if we were going to struggle, we would do it being ourselves, defending this counter our own way. Eventually, the pandemic passed, the shutters rose with strength once more, and today we are here to tell you that if you want our burger, you'll have to come and get it.
Mutual Respect is Non-Negotiable
Because mutual respect, face-to-face encounter, and the custody of our work are the only things that platform money cannot buy.
